UI - Connection Form Extras not inferring the correct type

As mentionned in #53943 (review).

When you edit a list (or any non string field such as boolean, etc..) via the "Extra fields" (not using the JSON editor), field will be converted to a string.

Flexible form should infer the type if possible based on the existing saved value in case we are 'editing'.

Starting with an array field like this:

After saving ends up in:

Tagging for 3.0.5 as I suspect this was bugged since 3.0.0 and there are other critical bug fixes to fix for 3.0.4
