[FR]: Make image pulling optional

Instead of pulling images every time you start docker containers, can you add a --update option to the opik.sh script?

Motivation

I think it's more flexible, especially in situations where there's limited network capacity.

Hi @zrquan, thanks for raising this!

By default, Docker will only pull new images if they’ve changed since the last time you ran ./opik.sh.

If you’d like to stick to a specific version of Opik, you can set the OPIK_VERSION environment variable to any released version from our releases page
